I need to remove the original break assembley in the 97 with all the lines going to the power steering stuff. I am going to run manual steering and brakes w/o anti lock stuff. What should I use and can I reuse any stock parts?

You should sell me all the hydroboost stuff ;)

I think Maximum Motorsports sells the manual brake conversion. They changed the pivot point on the new pedal to keep an easy pedal travel yet have plenty of stopping power.run

You can disconnect the ABS computer and run fine without it.

JMC makes a great Dual master cylinder set up. http://www.autoworksracing.com/ford_brake_master_cylinder.htm

I am pleased with it on my car and very safe since you two separate master cylinders. One for front one for rear. It has an adjustable pivot on the master cylinder to balance them out. No need for a prop valve. You can get real cool and run a cable that adjusts it from the driver seat. You lose the weight of the bulky factory stuff.
