So does anyone know how you find what your stroke length is in inches? And does anyone know what the thickness is for a 9333PT1 or 2 head gasket?

If you have the head off you can measure the distance that the piston moves from the bottom to the top of the stroke. Stock stroke should be 3.0 inchs on a 302 306 310

3.0" on a 302-306
3.25 on a 331*
3.4" on a 347*
*Assuming your using a stock block..and not a 4.125" bore kit in a dart block

Your stroke is measured from the centerline of your crank to the centerline of the rod journal. Rod length is measured from the centerline of the rod journal to the centerline of the piston pin. Stroker pistons have different pin heights than stock pistons. So What Tim is saying is that regardless of rod/piston length, if you measure the distance from bottom dead center to top dead center, that is your stroke.
